Gourmet Toasted Cheese Panini with Cheetos

Panini Ingredients for 4

8 slices thick Artisan bread
12 ounce Gruyere Cheese
6 ounce White Cheddar
4 slices Muenster Cheese
2 yellow onions
1 teaspoon each fresh thyme and rosemary
1 teaspoon brown sugar, 1 tablespoon balsamic vinegar
3 tablespoon butter and olive oil

How To Make

Get your panini maker ready and hot. Saute diced onion in pan with salt, pepper, fresh thyme and fresh rosemary. Saute until onions are starting to brown. Stir in brown sugar and Balsamic vinegar to caramelize a bit.
Add olive oil to Panini maker. Butter the outside of the bread. Spread mayonnaise, add cheeses, sauteed onions to the open face slice of bread, place the other slice of bread on top and place the sandwich in the hot Panini maker. Once grilled, I slip the Cheetos in to keep the crunch.
