This wine is made in the Classy d’Asti style Barbera, medium bodied, with piquant, formidable, lively acidity and moderate flavor intensity making it one of the best food wines on the planet. Brilliant Ruby color. Sleek with formidable acidity. A touch of  white pepper rounds out this wine in its endless quest to support rich Risotto with Black Truffle and Chicken Calcitroic.  Enjoy now with decanting or age 2-5 years.

WINEMAKER NOTES

2023 Harvest: The 2023 Pauli Ranch grapes were picked late at night and delivered to the winery nice and fresh. Later than normal due to the colder and shorter growing season but picked before the bulk of the rain. The lot started fermentation spontaneously after a 4 day cold soak at 45 degrees.


Acquerello Risotto with Black Truffle

The key to a traditional Piemonte risotto is to use Acquerello rice. Chefs use this highly versatile strain all over Italy as the extra-long ageing process straightens the grain, making it less likely to break down in cooking.
