Nestled in the heart of the Russian River Valley, this tiny Dijon clone vineyard benefits from the evening Pacific Ocean breezes and “Gold Ridge” soil. A very small but precious vineyard providing true Burgundian style fruit
WINEMAKER NOTES
A highly regarded vineyard, Dolinsek Ranch is one of my favorites. Planted in Dijon 115 and 777 help create a true Burgundian style Pinot Noir. Aged for 16 months in French Oak and very limited.
Piccata is an Italian word spelled sometimes as picatta or pichotta. Traditionally, the Italians use veal (veal piccata). We love making Piccata with chicken!
